Mexican at Home and Away

Cafe des Amis Canterbury which is celebrating its 25 year anniversary now was probably my first taste of mexican cuisine naturally it was the nachos followed by fajitas cafedez.com/

Later when holidaying in Arizona close to the border with Mexico we discovered delicious food much closer to the real thing fresh ingredients, slow cooked dishes with an unusual depth of flavour and all those types of chillies.

Another holiday favourite for us is the fun great value Fiesta del Burro Loco in Myrtle Beach South Carolina. Fiery chicken tostadas were the start of a successful Mexican dinner at home, shredded poached chicken in lime chipotle flavoured mayonnaise with tarragon and chervil, piled onto fried corn tortillas and served with lettuce, avocado and jalapeño peppers


This recipe and the general theme for the menu was inspired by the very good book Wahaca mexican food at home by Tomasina Miers


Other dishes included guacamole, salsa, peppers stuffed with cream cheese, mexican summer slaw and chilori a slow cooked shredded pork with soft tortillas and sour cream.
